We asked Chef Simpson to share one of his "can’t miss" crowd favorites with us, so here is the recipe for all the juicy spicy goodness of his chicken …

Pulled Jerk BBQ Sliders
Ingredients 

lb chicken thigh boneless

oz Walkerswood jerk seasoning

2 oz Walkerswood jerk BBQ

teaspoon of granulated garlic

teaspoon of granulated onion

teaspoon of Old Bay seasoning

four or three inches of honey brioche bun

Pinch salt and pepper

Method

Wash and clean the chicken and marinate with salt, pepper, and Walkerswood jerk seasoning with all your dry ingredients.

Put the chicken to marinate in the refrigerator for one hour, then grill on medium heat.

When this is done, in a small bowl pull your chicken into large pieces, lightly toss it with BBQ sauce lightly and place it on top of your brioche slider bun and top with coleslaw. 

Making Apple Coleslaw

Ingredients

one cup of shredded iceberg lettuce

3 ounces of shredded carrot

3 ounces of shredded green apple

2 ounces of mayonnaise

tablespoon of Dijon mustard

one teaspoon of granulated sugar

Method

Combine all ingredients in a mixing bowl and toss together lightly.

This is a very quick and easy-to-make meal with simple ingredients … now stack those buns with your slider-pulled jerk chicken and enjoy!
